Here's something to fire up your imagination: The fields surrounding Collinsville, just a few miles across the river from the Arch, are the source of 60 percent of the world horseradish supply. Introduced into the area by German immigrants around the middle of the 19th century, the pungent root was found to thrive on a combination of the potash-rich soil and the relative extremes -- hot summers and cold winters -- of the local weather.
