Ever wonder why the steaks you get at Tony's taste so good? Sure, executive chef and owner Vince Bommarito is a master in the kitchen, but his steaks are some of the world's best. For years those steaks were available only at restaurants and one high-end local grocery store. (Hint: Its name starts with S.) But this April Savage Foods, the meat supplier that provides cuts for posh eateries like Tony's, Citizen Kane's Steak House and Cardwell's (to name a few), went retail with Bull Market, a specialty shop that trades in high-quality meats. The result is nothing short of magnificent. Angus beef is Savage Foods' stock-in-trade, and Bull Market traffics only in prime and top-choice cuts of beef (though they do sell lamb, pork, chicken, etc.). The shop is a pared-down splendor of reach-in coolers holding shrink-wrapped rows of Bull Market's magnificent product. While it doesn't have a traditional meat counter, the shop abuts the Savage Foods processing facility, and owner/manager Nita Savage promises her shop can accommodate any cut. (Except on Mondays, when they're closed.)
