When I discussed Michael Ruhlman's visit to Viking to promote his new book, The Elements of Cooking, I neglected to mention the food we were served as part of his demo. This dishes were prepared by the Viking kitchen staff to match what Ruhlman was making on stage. At any rate, I wasn't paying close enough attention to what I ate to review it, per se, but Bill has just filed his report on the evening, including the food, and, I have to say, I pretty much agree.
