Capitalist Pig (2727 South 12th Street; 314-772-1180), the new barbecue restaurant from Mad Art Gallery owner Ron Buechele and located inside the Mad Art GAllery space, was scheduled to open this Wednesday, October 10.
However, Buechele announced this past Friday in an email to press contacts and a post on the restaurant's Facebook page, that Capitalist Pig's opening will be postponed "a little longer."
The decision follows a preview event that the restaurant held last Thursday evening.
We had a tasting last night and although we feel it was a success, it illustrated some issues with certain items that Capitalist Pig will be serving. Some of the food was not as good as I think it could be. I also ran into some unexpected problems with sourcing some of the meat and I was not 100% satisfied with the results. Finding sustainable meat in the quantities that we need is challenging, but I believe it can be done.
As a result, I have come to the difficult decision of postponing the opening of Capitalist Pig for a little longer. I am disappointed that we cannot open as planned, but I would rather postpone than to serve food that I do not believe in 100%. Please know that I truly appreciate your continued interest and support.
