Land-locked pescatarians and seafood lovers rejoice -- Vin de Set's (2017 Chouteau Avenue) Fresh Fish Market returns for a second year with saltwater treasures straight off the boat from the coast. Every Thursday from now through the fall, head to the rooftop European-style open-air market to choose your own dinner adventure.
"We're really showcasing the freshness of the product," says executive chef Ivy Magruder. "You can pick it out, and we'll throw it on the grill."
Magruder leaves it up to the expert buyers at Bob's Seafood to elect the freshest possible fish, head-on shrimp, prawns and oysters for each Thursday-night dinner at Vin de Set.
Last year's selections included everything from sturgeon and trout to different styles of bass and snapper. Prices range from around $18 to about $60 for fish that feed at least three people.
"We don't know what's coming through our back door until it arrives," says Magruder. "We take pride in partnering with Bob's because we know each other's standards and are clicking on all cylinders."
Each pick gets grilled to order and served with fragrant basmati rice and haricot verts. Fish get a simple seasoning of salt and pepper before hitting the grill and come with a choice of sauce.
A delicate lemon beurre blanc with shallots is recommended for leaner fish. A parsley garlic butter suits middle-of-the-road picks, and a heavier tomato salsa made with fresh garlic, red onion and sweet onion plays well with with fattier selections.
"We don't want to stand in the way of nature. The point is to complement, not get in the way of flavor," says Magruder, adding that, "In order for this to be successful, we are going to run out. There won't be leftovers on Friday."
