Green Bean (232 North Euclid Avenue; 314-361-4444), a salad and wrap place in the Central West End, announced this week that Friday, September 6, will be its last day of business, as first reported by Sauce. The fast-casual restaurant opened in November 2011 when cofounder Sarah Haselkorn was still in college. But soon we named the "Pueblito" salad one of St. Louis' 100 must-eat dishes.
The menu was fairly small and focused on sustainable produce, but to great effect. Many are no doubt sad to see it go. Haselkorn tells Gut Check that several things led up to the decision to close. "We have some stuff that put pretty big strains on the business back in the first year, and when I took over control of the business I thought that I could pull us back and really do something great," Haselkorn says, "but it was just a little bit of too little, too late."
Haselkorn says she learned a lot in the last two years, about both business management and the food industry. She just graduated from Washington University earlier this year and has been working for Anheuser-Busch since July.
"It really has been great, and our customers have been the best part of it, hands down," Haselkorn says. "They've been supportive and loyal, and they've been very close with the business from the beginning. We're sorry to be depriving the community of fresh sustainable salads, but it's the right thing to do for the business. So it's time."
