Remy's Kitchen & Wine Bar (222 South Bemiston Avenue, Clayton; 314-726-5757) is hosting its monthly wine dinner Tuesday night, September 10 at 6:30 p.m. Following the theme of dinners around the world this year, executive sous chef Rachel Moeller is taking guests to Denmark. Perhaps you should give it a try if your idea of Danish food is, well, danishes.
For the first course, start with Gravad laks smørrebrød -- an open faced cured salmon sandwich with egg, radish and onion. It's paired with Akvavit, a traditonal Danish spirit from Aalborg, Denmark, which gets its flavor from spices, most notably caraway or dill. The second course is Tivoli salat, a salad with ham, Havarti, tomato, cucumber and green peppers. It's paired with Romain Papilloud 'Amandoleyre' Grand Cru 2010 from Vétroz, Valais, Switzerland. Papilloud is a third-generation vintner, and he and his wife and son work the land by hand, which, as you can imagine, produces great wine.
For the third course, Moeller is preparing Æbleflæsk og rødkäl (don't ask us how to pronounce that) -- fried pork belly slices with apples and onions on braised red cabbage. It will be paired with Old Danish Braggot from Billund, Denmark. It's a Danish beer that's based on an eighteenth century recipe and brewed using tradtional Danish practices.
