Josh Galliano, formerly the chef de cuisine of Larry Forgione’s An American Place, now runs the kitchen of the popular Maplewood restaurant. Galliano’s cuisine is difficult to categorize, but he treats every dish with restraint and respect. The technique is impressive, and the presentations are striking, but the ultimate focus is on the ingredients. The menu is seasonal (and features local produce when possible), but expect standout beef, lamb, pork and seafood dishes. The restaurant’s décor, service and ambiance remain topnotch.

The Inside Word on Monarch

    I wish I liked this place as much as other people seem to. It's obvious that the owners and management are aspiring to be something great, but the times I've eaten at Monarch the execution has fallen far short of the mark. Bottles on the wine list are sold out, the food isn't up to snuff. Service is solicitous but even in St. Louis -- a city not exactly known for topnotch waitpersons -- politesse only takes a place so far. One real problem with Monarch is the air flow between the "bistro" room and the bar. Cigarette stink doesn't go with high-end vittles -- not even when said vittles are smoked.
