But tucked amid the chardonnay scallops and tuna poke, EdgeWild's dry-rubbed beauties stand as an example of how great food can come from unexpected places. The award-winning wings (they took the crown at the 2013 UCP Wing Ding) are triple-rubbed: dry rubbed, smoked, rubbed again, fried and finished with a final coating. The result is a sauce-free masterpiece — a mingling of brown-sugar sweetness and a deep, savory Worcestershire punch.
