The #1 problem with most vegetable-centric sandwiches? Sprouts. I hate sprouts. The #2 problem? Simply removing the meat from another sandwich (or replacing it with a boring ol' portobello mushroom) and serving the toppings as a sop to vegetarians.

The sandwich spills over with crisp cucumber and onion, tender roasted red peppers and field greens dressed in balsamic vinegar. Feta cheese and black olive added funk and snap, while locally made Ah!Zeefa lentil dip rounds out the flavor. All of this is served between thick slices of focaccia bread for a dish that is both light in flavor and body yet utterly filling.
