The burger at Newstead Tower Public House
You can dress up the burger at Newstead Tower Public House. You can add one of several different cheeses, as I did here.  House-cured bacon is available, as are grilled mushrooms, caramelized onions and a fried egg from Benne's Farm.

You can add any of these things, but you don't have to. By itself, the burger at Anthony Devoti's is ideal.

The burger is hand-formed using grass-fed ground chuck from Fruitland Farm in Fruitland, Missouri. Though grass-feed beef might not have as strong -- as meaty, for lack of a better term -- a flavor as corn-fed beef, cooked medium-rare or medium, it has a pure, mineral-tinged, undeniably beefy flavor.

However you do (or don't) top it, that your conscience can feel better for eating local, more sustainable beef instead of an agricultural-industrial product makes this burger taste even better.

I'm counting down -- in no particular order -- 100 of my favorite dishes in St. Louis. Some are well-known, others obscure. Some are expensive, others dirt cheap. All of them, I guarantee, are delicious. Please do not hesitate to share your own favorites via the comments thread.
