Bolyard's Meat & Provisions Opens Friday, November 28

You should be skipping Black Friday anyway, but we've got another suggestion for you following Thanksgiving. Bolyard's Meat & Provisions (2810 Sutton Boulevard; 314-647-2567) will open this Friday, November 28 at 10 a.m. After ten years with Kevin Nashan at Sidney Street Cafe, Chris Bolyard's full-service butcher shop is finally coming to fruition.

Like the new Butchery at Truffles in Ladue, Bolyard's will be a old-fashioned butcher shop. However, Bolyard and his wife, Abbie, made sure that every farm they source from handles their animals in a humane way; they're also all pasture-raised. You can find information on all of Bolyard's source farms here.

Bolyard told us back in February that one of the main ideas behind the store is to use the entire animal -- of course, popular cuts will sell out first, but he will encourages people to try new things. The selection will also include things like bacon, housemade ketchup and stocks.

"I've always loved butchering -- I've always been really passionate about it, and over the years at Sidney Street I've been able to hone it," Bolyard said. "It's a craft. It's a skill. It's something that St. Louis is definitely ready for and needs."

Bolyard's will be opening Monday through Saturday from 10 a.m. to 7 p.m. You can find more information on its Facebook page.
