Green Bean is now open at 232 North Euclid Avenue. This is the first restaurant for business partners Nick Guzman, a 2011 graduate of Amherst College, and Sarah Haselkorn, a junior at Washington University.
"We are a salad and salad-wrap restaurant," Guzman explains. "We're working to be sustainable and working with local farmers.
The restaurant offers such "signature" salads as the "Turduckin": arugula, mixed greens, chickpeas, cucumber, dried apricot, cherry tomato,
pita chips, feta and duck confit, with a lemon-tahini yogurt
dressing.
Diners can also build their own salad. All dressings are made in-house.
The full menu is available on the Green Bean website. As the "Turduckin" salad makes apparent, that menu does include meat (beef, chicken and duck at the moment).
"It's not vegetarian," Guzman says.
Though it is not available at the moment, Green Bean will offer wine -- and, as a twist, it will be served from a keg.
