At La Patisserie Chouquette (1626 Tower Grove Avenue, 314-932-7935), St. Louis pastry chef Simone Faure is baking cakes that are almost too beautiful to eat — one recent confection featured not just twelve tiers, but also a stage with a crystal chandelier.

But while adults might feel reticent diving into creations this gorgeous, kids have no such compunctions. They know that underneath all that fondant is something that tastes every bit as good as it looks — and they are not about to hold back.

As proof, Faure shared a video this weekend of a young customer named "Sophia" — who greeted her custom creation with the kind of excitement that the we grown-ups have had conditioned out of us. We have our superego to hold back such displays of unbridled passion, but this little birthday girl is pure id.


And Faure — an acclaimed pastry chef who worked at the Ritz-Carlton before opening a shop of her own in Botanical Heights — greeted the little girl's passion with exactly the reaction it deserves.

"WARNING!!!! The following video is....hilarious! Never in my 20 years of baking have I EVER had a cake reveal go anything like this," she wrote on Facebook. "All hail Sophia! Let's show this little cake lover some birthday love."

Happy birthday, Sophia, and please never grow too old and jaded to dive right in and take a big bite!
