Monte Bello Pizzeria (3662 Weber Road; 314-638-8861) is the little restaurant that could. Owner Tom Nix took over the 64-year-old family business last year, only to be thwarted by plumbing issues in June. The needed kitchen renovations were so extensive that Nix wasn't sure Monte Bello would stay open. Luckily, it opened on Thursday to a warm welcome.

Even with all of the setbacks with different contractors and inspectors, we persevered and are once again open," Nix told us via email. "We opened last Thursday and we were overwhelmed Thursday through Sunday! It was a great weekend!"

Nix wrote on Facebook that the waits have been long the past few days due to high demand, but that he and his team are working on improving that. Monte Bello is now open Tuesday through Thursday from 4 p.m. to 9 p.m., Saturday and Sunday from 4 p.m. to 10 p.m. and Sunday from 4 p.m. to 9 p.m.
