For this week's Gut Check Video, we bring you a lesson in chemistry.

Will Pelly, executive chef for Sanctuaria Wild Tapas (4198 Manchester Avenue; 314-535-9700), invited us to step up to the bar for a demonstration of his Valentine's Day-inspired cocktail. Two of the most important ingredients -- calcium lactate and sodium alginate -- may not sound very sexy, but just watch what Pelly does with them, a bunch of strawberries, some Champagne and a lot of love.
