VietNam Style, the well-reviewed Vietnamese restaurant on the eastern edge of the Delmar Loop, is now Rebel @ VStyle (6100 Delmar Boulevard, 314-405-8438) — an Asian fusion spot with a late-night lounge.
Thao Truong, the co-owner of VietNam Style, says she remains involved, but that she's now working in partnership with new manager Sara Winbush. Winbush, who came on board last week, says she's still ironing out the new concept, but that she's now aiming for a nightlife vibe in the evenings. A small menu of starters will be available beginning at 7 p.m.
"We're still the same company, but it's a new menu and a different chef," she says. "We're working through everything make sure it's the best fit."Rebel @ VStyle already has a new sign out front, as well as a social media presence boasting Patron cupcakes and hours til 1:30 a.m. seven days a week. The signature drink, "the Rebel," is a frozen alcoholic mango slushie, Winbush says.
VietNam Style opened in October 2016 and earned raves from critics. Truong's husband, Yun Vu, served as chef, cooking modern Vietnamese cuisine.
Winbush declined to name the project's new chef just yet, saying they're looking to make sure they have the right fit before going public. She also said the partners would be exploring adding more seating in the lower level.
"It's going to be a fun vibe for the Loop," she says.
