FoodWire: More on New Balaban's

As I reported on Monday, Steve McIntyre, who owned Balaban's in the Central West End for a good portion of its 36-year run, is opening Balaban's Wine Cellar & Tapas Bar this November at 1772 Clarkson Road in Chesterfield.

Today I received the official press release announcing the opening, and it suggests that retail wine sales will play a large part in the new venture. A couple of choice bits after the jump...

Committed to today's correctness of offering food with alcohol and to the enhancement of their customers' taste sensations, McIntyre and [his business partner Brian] Underwood have reworked Balaban's classic dishes into small plates for pairing with complementary glasses or bottles of wine whether dining in the cellar or using the gourmet carry out section.
And:
This wine stock in all price ranges--meticulously sourced, expertly cellared, and lovingly appreciated by McIntyre---will spin off a business emphasizing the complementary pairing of food and wine, the recreating of the original café's convivial atmosphere and a business of retail wine sales, eat in and carry out small plates, gift baskets, wine accessories, wine and food classes and tastings, and private wine dinners.
