Cleveland-Heath's Cauliflower Soup: One of 100 St. Louis Dishes You Must Eat Right Now

The Gut Check One Hundred is our accounting of the 100 dishes in St. Louis that you must eat right now. These are the best dishes at the newest restaurants and the newest dishes at the best restaurants. These are the 100 dishes that define St. Louis dining in 2013. Our list culminates this fall when the Riverfront Times Best of St. Louis 2013 names the "Best Dish" of the year.

OK, so when I say these are the 100 St. Louis dishes you should eat right now, I generally don't mean that if you don't eat this right now, you never can.


Today, though, while at lunch at reigning "Best New Restaurant" Cleveland-Heath (106 North Main Street, Edwardsville, Illinois; 636-307-4830), I began my meal with a cup of the soup of the day. So taken was I with this soup that I decided you really should eat this right now because I have no idea whether it will be the soup of tomorrow or the day after that.

The soup in question is a cauliflower purée. Really, there's not much more to it than that: a touch of cream; a garnish of thinly sliced green onion; maybe (at least, the bartender thinks so) a touch of sriracha. You don't need much more than the velvet texture of the soup and the concentrated flavor -- a touch sweet, a touch nutty -- of cauliflower.

Can't make it to Cleveland-Heath today? Don't worry. I'll have another dish from the Edwardsville standout in tomorrow's edition of the Gut Check One Hundred 2013.

(Did I neglect to mention that I'm not restricting the list to one dish per restaurant? We're looking for the best, not excuses to hand out participation ribbons.)
