The new burger joint from the former co-owner of Big V's is set to open Monday, August 12. The Dam (3173 Morganford Road; 314-771-3173) gets its name from next-door neighbor Amsterdam Tavern (3175 Morganford Road; 314-772-8224) and will focus on locally sourced, hand-packed burgers, sandwiches and sides.

Michele Coen-Racanelli knows a thing or two about burgers: you may remember The Animal, the beloved triple-patty burger from Big V's covered in bacon, onions, roasted jalapenos, cheese and barbecue sauce. Big V's closed in 2007, but Coen is back in a collaboration with Matt Steltzer, owner of Amsterdam Tavern.

The head chef is Matt Galati, formerly of Big V's, Niche, Onesto, The Mad Tomato and Sauce on the Side. They are planning The Dam's menu to be as organic and local as they can -- Coen calls it slow food, fast. She'll also run her event planning and catering venture, Michele C. Catering & Events out of The Dam.
