After shooting photos at the Blind Tiger (7376 Manchester Road; 314-646-8822) for Gut Check, my colleague returned to the office, eyes filled with the raptures. "Oh my goodness. You have to have the 'Hog Mess,'" she said.

No amount of accolades could have prepared me for the porkapalooza I was about to enjoy. Chef Jaxon Noon begins with a crispy, hand-tossed crust and coats it in a sweet and spicy rib braise that has been infused with pork drippings from Blind Tiger's ribs. He tops the pizza with a mélange of pepperoni sausage, salami and bacon, then sprinkles it with jalapenos and smoked garlic to turn up the heat. It's a monster of a pie, and it might be a bit much, but Noon balances the fat and spice with chunks of juicy pineapple. It's downright shameful and a complete delight.
