Thrillist Names Pastaria the Best Pizza in Missouri

Thrillist, a national food, drink and travel site which has given much love to St. Louis restaurants in the past, just put out a list of the top pizza place in each state. And nope, it didn't pick Imo's. Gerard Craft's Pastaria (7734 Forsyth Boulevard, Clayton; 314-862-6603) got the nod for the Show-Me State.

Pastaria is, of course, known for its fresh pasta, but the Neapolitan-style pizza is definitely a standout. In our original review of the restaurant, back in 2012, Riverfront Times was enamored with the simple and unique pasta dishes, but we stopped for some pie:

The crust is lovely, with a good chew and properly speckled underneath with blistered char. There are basic pizzas: a margherita; a four-cheese variety; a pie with Fontina cheese and housemade pepperoni, the cured meat earthier than more conventional, processed pepperoni. A more adventurous diner might opt for the "Brussels Sprouts" pizza, the pungent vegetable, shredded and spiked with lemon, served with mozzarella cheese atop a richer-than-rich sauce of Béchamel, made even richer by rendered lardo.

Executive chef Michael Petres offers pizzas ranging from the classic to collaborations like the spicy "Salume Beddu Nduja," with tomato, fior di latte, garlic, oregano and honey. Thrillist shouts out the Roman, pictured above.

Though the Gateway to the West is known for its unique style of pizza that uses Provel, and that pizza is delicious in its very own special way, you've got to choose Gerard Craft's wood-fired pizza joint as the best. Especially once you try the Roman, topped with sizzling bacon, chili, tomato, garlic, and two types of cheese.
