The Preston Opens Today at the Chase Park Plaza

Goodbye, Eau Bistro — hello, the Preston!

The Chase Park Plaza, the venerable grand hotel in the Central West End, today opened a stylish new restaurant in the spot that once held Eau Bistro. The Preston is named after St. Louis architect Preston J. Bradshaw, who designed the hotel nearly 100 years ago. It will seat 104.

The Preston's menu promises a host of plates for sharing, with nothing priced over $20. You can get a smoked duck breast, charred octopus, veal ragu, even a wagyu meatball. Smaller bites include charred shishitos, citrus-marinated olives and warm baby kale. Cocktails range from $9 to $12 and include the Mayfair (Plymouth gin, sorel, lemon, sugar and egg white) and Goodnight Mr. Preston (Buffalo Trace bourbon, Carpano Antica, Benedictine and Angostura bitters).

Eau Bistro had been part of the Chase's restaurant offerings since 1999, but closed last fall to allow for renovations. 

The kitchen at the Preston is under the command of executive chef Kyle Lipetzky, who's been in charge at the Chase Park Plaza since 2012. He's joined by executive sous chef Bryan Byard, executive pastry chef David Laufer and chef de cuisine Collin Smelser.

The Preston will be open daily for breakfast (from 6 to 11 a.m.) and dinner from 5 to 10 p.m., with cocktail service for another hour or two depending on the evening. Sunday brunch will be served from 10 a.m. to 2 p.m.
