Last month, James Beard Award-winning chef Gerard Craft closed his flagship restaurant, Niche — and the concept set to replace it, Sardella, is still at least a month from opening.

So what's a Craft fan to do? Maybe try the Wells-Fargo parking lot on the edge of downtown St. Louis (1 N. Jefferson Avenue) from 11 a.m. to 3 p.m. Today only, Craft will be serving some Sardella lunch items from Seoul Taco's new truck — sort of a sneak peek for those who missed the chef's pop-up previews.

And you'll be helping to support a good cause.

Seoul Taco owner David Choi recently launched the truck — the second to bear the brand — and has promised that, every Monday, all purchases will benefit the St. Louis MetroMarket, a mobile farmers’ market that visits the city's food deserts. The Sardella proceeds full under that rubric as well.

“Gerard and I share a passion for getting healthy, affordable food to people in need so this partnership made a lot of sense," Choi said in a prepared release. "I hope to get other guest chefs on the red truck on Mondays to help raise as much money as we can to benefit MetroMarket.”

Hear, hear! And so if you want to be in on the latest, help a good cause and get a tasty lunch to-go near downtown, stop by Wells-Fargo and look for the bright red truck.

Sardella hopes to be open in Clayton by late August.
