Very few companies in the United States make their own chocolate from scratch — i.e., starting from a cacao bean and ending with a chocolate bar. We're fortunate to have two such companies in Missouri: Askinosie Chocolate in Springfield (a close second in this category), and Patric Chocolate in Columbia. Don't let the sticker shock of Patric Chocolate scare you away. (The 50-gram bars are priced at $6.25 apiece on Patric's website.) You'll simply need to adjust the way you eat a bar of chocolate. We've found that eating one little square of this dark chocolate a day can be extremely satisfying. (Stop laughing, it's true.) Let the square sit on your tongue and be prepared for an array of flavors to hit you — fruits, spices, smokiness. It's fun to try all three versions: 67 percent cacao, 70 percent and 75 percent). You'll be surprised at how much difference a few of those percentage points make.
