Fascinating fromage

The great mystery of cheese is that some brave soul in the hoary past left milk in a dark closet for several months, rediscovered said milk in its congealed and odoriferous state, and then decided to have a nibble — because who wouldn't do that? The mind boggles at the audacity of this anonymous gourmand. And even though cheese is now a beloved staple of many diets (lactose-intolerant people excluded, you pitiful wretches), there are varieties and strains of cheese that still give pause to otherwise confident fans of fromage.
