It looks simple, but Songbird's (4476 Chouteau Avenue, 314-781-4344, songbirdstl.com) masterpiece of a breakfast sandwich, the Combo, hits every note you want from the form: buttery toasted-golden sourdough, a perfectly gooey fried farm egg, thick-sliced and beautifully cooked local bacon, sharp-aged white cheddar cheese, some sea salt and a drizzle of local honey. Apparently people try to order it without this last ingredient. Fools.

The biscuits at Honey Bee's Biscuits + Good Eats (200 North Kirkwood Road, Kirkwood; 314-650-0762, honeybeesbg.com) are a masterpiece on their own, but they become otherworldly when stuffed with a perfectly folded egg, slab bacon and gooey cheese. That drizzle of honey over the top of the biscuits before they go in the oven envelopes everything in gentle sweetness.

While it may be difficult to order anything but those ridiculously good pancakes at Grand Pied (3137 Morgan Ford Road, grandpied.com), the Breakfast Po Boy makes a case for branching out. This NOLA-inspired dish starts with a lightly toasted Union Loafers hoagie roll, which is filled with paprika and garlic-kissed andouille, scrambled eggs, refreshing slaw and Crystal hot sauce aioli. The crispy breakfast potatoes served on the side may be the best part of the dish.

Though traditionally made with beef, Cafe Miami's (2022 South 12th Street, 314-405-8178, cafemiamistl.com) ropa vieja features tender, slow-cooked pork smothered in peppers and onions, topped with molten Provel cheese, spicy mayo and a gooey egg. The meat's juice, combined with the softened onions, gooey cheese, mayo and egg yolk, form an outrageous sauce concoction that infuses every bite.

Knead Bakehouse (3467 Hampton Avenue, 314-376-4361, kneadbakehouse.com) may be known for its outstanding sourdough loaves, but its breakfast sandwiches — which feature pillow-soft sesame brioche versions of the naturally fermented bread — are the cafe's sleeper favorite. Gently toasted, the bun is stuffed with a soft-fried egg, thinly sliced ham, lettuce, tomato, white cheddar, fresh herbs and a garlicky aioli that ties it all together.
