The great mystery of cheese is that some brave soul in the hoary past left milk in a dark closet for several months, rediscovered said milk in its congealed and odoriferous state, and then decided to have a nibble — because who wouldn't do that? The mind boggles at the audacity of this anonymous gourmand. And even though cheese is now a beloved staple of many diets (lactose-intolerant people excluded, you pitiful wretches), there are varieties and strains of cheese that still give pause to otherwise confident fans of fromage. Michael Dumay and Dave Gratz take your hand and lead you into the dark corners of the cheese-mongers world, where the runny and the stanky hold sway, during their class "The Mysterious World of Cheese" at 6:30 p.m. tonight at Whole Foods Market (1601 South Brentwood Boulevard, Brentwood; 314-968-7744 or www.wholefoodsmarket.com).
